La Cumbre Junior High School’s ASES Teen Cuisine Program supports healthy eating with a tasty, simple recipe

A message from the After School Education and Safety (ASES) Program

Whether company’s coming or you just want to do a little something special…here is an excellent recipe that you can use with the grill. This can be served as a delicious and easy appetizer or as a main course served with a complimentary salad.

Yummy Tomato Bruschetta

Ingredients

Method

Cut tomatoes in half; squeeze out the seeds. Chop tomatoes and onion and then transfer to a bowl. Add chopped basil, garlic, salt and pepper; and then mix gently. Lightly brush the bread with olive oil and place on the grill until lightly brown on both sides.

The bread can be grilled in advance, but the tomato topping is best mixed together at the last minute and spooned onto the slices of grilled bread as you serve it to your guests, family or friends. You can also serve the components separately -- a platter of grilled bread and a bowl of the topping -- and let your guests top their own bread at their leisure. Enjoy and Bon Appetite!
